Step out of your comfort zone and try something new– My journey into brewing Kombucha


Kombucha is pretty neat. If you have never heard of it, it is a fermented tea (usually black or green, but sometimes oolong and pu’erh teas are used). The fermentation process starts with a SCOBY, also known as a Symbiotic Colony of Bacteria and Yeast, which sounds kind of gross but it’s actually pretty cool.  It looks like a sponge-like disk ( image below) and is sometimes called a mushroom.  The tea is sweetened with sugar before it is combined with the scoby which then feasts off of the sugar leaving you with a naturally fizzy drink. The finished product is usually slightly sweet and a bit sour, although different brews vary depending on the length of time brewed and the type of tea.


Now, Kombucha isn’t everyones cup of tea ( literally), but I enjoy it; its also a healthier alternative to pop which has a ton of sugar and other crap thats not good for your body. The probiotics that are a by product of the fermented tea and Scoby can ‘ heal your gut’, but research on the benefits of Kombucha are still ongoing and its hard to say to what degree this is fact, I just know that it makes me feel good!

I recently decided to venture into brewing Kombucha at home. Which can sound scary,  since you are dealing with an active bacterial culture, but so far its easier then it looks! The important part is making sure everything is clean, to avoid any sort of contamination, and to keep an eye on the ferment process. I watch it like its my baby, my little fungus baby.  I mostly watch what happens everyday and take notes of the tastes, smells, and what ever observation I notice because I have no idea what I am doing!

Experimenting with something new is taking a leap into uncharted territory, which always brings forth feelings of fear and worry, but it shouldn’t stop you from giving anything new a shot! Whenever I feel this way I remind my self to trust and that it will all be okay. If I fail, SO WHAT? One of my fellow yoga teachers said that to me when I was feeling discouraged, and it’s something that I say frequently when I catch myself undermining my own capabilities. SO WHAT? Regardless of what the outcome there will always be lessons to be learned, and you will have something to add to your list of experiences!


Making your own home brew is like having a little science experiment in your kitchen, and once you feel comfortable you can experiment in other ways by creating custom flavours! This batch was made with a green tea and I flavoured it with orange, lemon, and ginger. Yum! Have fun, get creative, try something new, and make something new I guarantee it will be worth it!
